Cooking in Kinshasa

Now that I am in Kinshasa, the produce that is available is even more limited than it was in Kampala. I am learning to cook the standard Congolese fare, but I also like to change things up because experimenting and trying new things is what makes cooking fun. So I am learning new recipes with the foods that are available. Here is another list of recipes that I am building. Like my other lists, it will grow over time!


Amaranthus Potatoes Curry by I prepare this without the cumin seeds, mustard seeds, and green chilly and it still turns out well.

Easy Pinto Beans from Scratch by This recipe has nice Mexican-inspired flavours.



Lemon Cake by I only prepared the cake part without frosting or filling and it was still delicious.

Pumpkin Bread by I prepared this without ground cloves and it was still delicious. I’m also not sure if what I used was technically a pumpkin, but the flavour and consistency is similar. Instead of canned pumpkin puree, I cut up the fresh pumpkin/squash, boiled it until tender, and then mashed it up.



Easy Homemade Bread Recipe by I have been baking two batches (4 loaves) every week since self-isolation began so that we don’t have to go out and buy bread every few days. It turns out every time!

Easy Roasted Pumpkin Seeds by I season it with curry and a dash of chili powder. This is now my go-to recipe whenever we have a pumpkin or squash since seeds are so healthy and I haven’t found seeds sold here.

Recipe List for Uganda

I enjoy cooking and in Toronto I had a list of favourite online recipes that I would often revisit. Unfortunately most of them don’t work for Uganda because I can’t find certain ingredients. I enjoy getting fresh produce at the market and so try to get inspired by the foods that I can find. So now I am developing a repertoire of new recipes that work well in Uganda. Here are some recipes that I have tried so far that have worked well and I may revisit (they don’t make this list unless I have made them more than twice). I will probably be adding to this list as I continue to find more that I like.

Homemade Drop Biscuits by This recipe is something different but still quick for a special breakfast.

Homemade Flour Tortillas by I used this recipe to eat as tacos and then froze the leftovers for future quick pizzas, wraps, and chips! Yum!

Easy Thin Crust Pizza by I have tried 7 or 8 different online pizza recipes since coming to Uganda and this one takes the cake. I also recommend their Easy Pizza Sauce.



Chocolate banana avocado pudding or ice-cream by

Orange banana avocado smoothie by This is one of my favourite smoothy combinations. It tastes like dessert but is healthy and so I usually enjoy it for breakfast!
